- 4 eggs
- 8 Batavia Lettuce (roughly torn)
- 1 Red onion (sliced into rings)
- 4 Tomatoes (roughly chopped)
- 1 can White bean (drained and rinsed)
- 2 cans Tuna (drained)
- 4 sun-dried tomatoes (roughly chopped)
- 3 Tbsps olive oil
- 1 Tbsp white wine vinegar
- 1 clove garlic cloves (finely chopped)
- parsley (to garnish)
Preparation steps

Put the eggs in a pan of water and bring to the boil. Simmer for 4 minutes then rinse under running water and peel off the shells and cut the eggs into quarters.

Arrange the lettuce, onion, tomatoes, beans, tuna and sun-dried tomatoes into lunch boxes or plates and add the eggs.
3.
Mix together the oil, vinegar and garlic to make a dressing and drizzle over the salad. Season with salt and freshly ground black pepper and garnish with the parsley.
