1 large chicken (jointed and trimmed)
2 cups canned Tomatoes
1 ½ cups pitted black olives
4 cups button Mushrooms (sliced)
4 cups chicken stock
1 tsp dried oregano
1 tsp dried Basil

Preparation steps

1.
Coat the chicken in the oil and season with the dried herbs and seasoning. Heat a large casserole dish over a moderate heat until hot then seal the chicken in batches until golden brown in colour all over.
2.
Remove to a slow cooker and add the chopped tomatoes, olives, mushrooms and stock. Cover with a lid and cook on a medium setting for 6 hours until the chicken is cooked through.
3.
Adjust the seasoning to taste when the chicken is ready and pour back into a casserole dish for presentation.
4.
Garnish with the oregano before serving.
