400 grams Tofu (from the health food store)
2 tsps honey
20 milliliters lemon juice
60 milliliters dark soy sauce
2 Fennel bulb
3 carrots
300 grams young Spinach
40 grams butter
100 milliliters dry white wine
100 milliliters Vegetable broth
salt
freshly ground peppers
¼ tsp ground coriander
ground paprika (as desired)
4 Tbsps Sesame seeds
2 Tbsps roasted Pine nuts

Preparation steps

Cook the soy strips according to package directions.

Mix a marinade with the honey, lemon juice and soy sauce and marinate the soy strips for 2 hours.

Trim and quarter the fennel, remove the hard stalk and cut into strips. Peel the carrots and cut into sticks. Rinse and shake dry the spinach and cut into strips.

Heat half the butter in a pan and sauté the fennel and carrots for 3-4 minutes.

Pour in the wine and broth and season with salt, pepper and coriander. Simmer for 20-25 minutes over medium heat.

Remove the soy strips from the marinade and season with salt, pepper and paprika. Roll them in sesame seeds and fry until golden brown in the remaining butter.

Mix the spinach and pine nuts into the vegetables and transfer to plates.

Serve the vegetables and soy strips arranged on plates.
