- 18 ozs Spaghetti
- 1 ⅔ cups Vegetarian ground meat
- 2 Tbsps Oil
- 2 shallots
- 1 clove garlic cloves
- 1 stick Celery
- 2 carrots
- 1 Tbsp tomato puree
- 2 ⅔ cups Tomatoes
- 1 cup vegetable stock
- 1 tsp dried oregano
- salt
- freshly ground peppers
- cayenne pepper

Preparation steps

Peel and finely dice the shallots, carrots and garlic. Wash, trim and finely dice the celery.

Heat the oil and quickly brown the vegetarian mince. Add the shallots, carrots, garlic and celery and fry briefly. Then stir in the tomato puree and the vegetable stock. Wash and quarter the tomatoes and remove the hard green core at the top. Add to the sauce with the oregano and simmer for about 20 minutes.

Meanwhile, cook the spaghetti in boiling, salted water until al dente according to the package instructions.

Simmer the sauce a little longer if necessary, then season to taste with salt, pepper and cayenne pepper. Add the drained spaghetti and toss in the sauce. Serve on warmed plates. Hand grated Parmesan separately.
