Preparation steps

1.

Cook spaghetti in plenty of boiling salted water until al dente.

2.

Rinse bell peppers, trim, cut into quarters, remove the seeds and place skin-side up on a parchment paper-lined baking sheet. Roast in the preheated oven at 250°C (approximately 475°F) or under the oven broiler (watching carefully) until the skin begins to darken and blister, about 10 minutes. Remove from oven, cover with a wet paper towel and allow to cool.

3.

Rinse shrimp and drain. Stir together the white wine vinegar, balsamic vinegar, orange juice and olive oil. Season with salt and cayenne pepper.

4.

Peel skins off bell peppers and cut flesh lengthwise into thin strips. Mix bell peppers and shrimp with the marinade. Serve with the spaghetti.
