500 grams Spaghetti
400 grams Tomatoes
80 grams black Olives (pitted)
3 Tbsps olive oil
2 shallots
1 garlic clove
salt
freshly ground peppers
1 Tbsp thyme

Preparation steps

1.

Rinse the tomatoes and blanch in boiling water. Remove the tomatoes from the water and peel. Cut the tomatoes in half, remove the seeds, and finely dice. 

2.

Cut the olives into thin strips. 

3.

Peel and finely dice the shallots and garlic. Heat the olive oil in a pan, and sauté the shallots and garlic until translucent. Stir in the diced tomatoes, and simmer for a few minutes. Season to taste with salt and pepper, and sprinkle with the thyme. 

4.

Cook the spaghetti in boiling salted water until al dente. Drain the pasta, reserving one cup of the cooking liquid. 

5.

Mix the spaghetti, cooking water, and tomato sauce in a bowl. Garnish with the olives and freshly ground black pepper, and serve.
