2 Tbsps olive oil
6 cups waxy potatoes (chopped)
2 onions (sliced into rings)
6 eggs
3 Tbsps fresh thyme (chopped)
2 cloves garlic cloves (crushed)
2 unwaxed lemons (zest and juice of 1, the other sliced)

Preparation steps

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.

Heat the oil in a large non-stick frying pan and gently fry the potatoes, covered, for around 10 minutes, tossing occasionally. Add the onions and cook for a further 3-4 minutes.

Whisk the eggs together with 2 tbsp thyme, the garlic, 2 tbsp lemon juice, 1/2 tsp lemon zest, sea salt and ground black pepper. Pour over the potatoes and onions and transfer to the oven. Bake for approx. 20 minutes.
4.
Remove the tortilla from the frying pan and serve cut into pieces and garnished with lemon slices and sprinkled with the remaining lemon zest and thyme.
