400 grams potatoes
2 onions
1 small red paprika
2 Tbsps chopped parsley
150 grams Chorizo
4 Tbsps olive oil
4 eggs
salt
freshly ground peppers

Preparation steps

Peel the potatoes and onions and cut them into thin slices. Rinse the bell peppers, cut in half, remove seeds and ribs and cut into small cubes. Peel chorizo and cut into slices. Heat the oil in a skillet and add the vegetables. Add 1/2 cup water, bring to a simmer, cover and cook over medium heat for about 10 minutes.  Remove the cover and cook over high heat until the liquid has evaporated. Add the sausage.

Beat the eggs. Season with salt and pepper and stir in the parsley. Pour the eggs into the pan, cover and cook over low heat until firm. Turn the tortilla and cook on the second side until golden brown. Serve the tortilla in slices warm or cold.
