- 4 cups gluten-free Pasta
- 11 ozs Chorizo (peeled and sliced)
- 1 clove garlic cloves (minced)
- 1 tsp dried, red Chili flakes
- 0.333 cup sun-dried tomatoes (in oil)
- 1 ½ cups tomato passata
- 1 pinch caster sugar (superfine)
- 1 flat-leaf parsley (chopped)
- salt
- freshly ground Black pepper
Preparation steps

Cook the pasta in a large saucepan of salted, boiling water for 8-10 minutes until 'al dente. '

Meanwhile, heat the oil in a large saucepan over a moderate heat until hot. Add the chorizo and fry for 4-5 minutes until golden.

Add the garlic and fry for 30 seconds, stirring, and then add the chilli flakes, sun-dried tomato, passata, and sugar.

Stir well and simmer over a reduced heat for 5 minutes. Season to taste.

Drain the pasta well and toss immediately in the tomato sauce. Stir through the parsley and spoon into bowls before serving.
