1 tsp parsley (freshly chopped)
4 eggs
100 grams Sour cream
salt

50 grams Emmentaler cheese (finely grated)
2 Tbsps vegetable oil (for frying)
Basil (for garnish)

Preparation steps

1.

Rinse, pat dry and cut tomatoes in half.

2.

In a bowl, beat eggs. Whisk in sour cream, add parsley and season with salt and pepper.

3.

Heat 1 teaspoon oil in each of two pans. Divide tomatoes between pans and sauté briefly. Divide egg mixture between pans, sprinkle with cheese and reduce heat to low. Cover and cook about 10 minutes. Turn tortillas out onto plates and serve garnished with basil.
