Pine nuts are very healthy, but unfortunately not a cheap pleasure either. If you want, you can also replace the kernels with nuts, such as walnuts or almonds. That tastes really good too!

- 500 grams Spelt Spaghetti
- salt
- 400 grams Cherry tomatoes
- 100 grams sun-dried Tomatoes
- 3 garlic cloves
- 1 shallot
- 4 sprigs parsley
- 8 Tbsps olive oil
- 100 grams shelled Pine nuts
- 3 Tbsps white balsamic vinegar
- freshly ground peppers
Preparation steps
Cook pasta in salted boiling salted water until al dente, 15-20 minutes.
Meanwhile, rinse and quarter cherry tomatoes. Drain sun-dried tomatoes and chop. Peel and finely chop garlic and shallot. Rinse parsley, shake dry and coarsely chop.
Mix oil with cherry and sun-dried tomatoes, garlic, shallot, pine nuts and vinegar. Season with salt and pepper. Drain pasta and mix with dressing. Divide among plates and top with parsley.
