1 fresh bay leaf
1 ⅔ cups milk
1 ¾ ozs white Bread (crusts removed)
1 Tbsp butter
2 Tbsps Crème fraiche
1 tsp Horseradish (from a jar)
salt
freshly ground White pepper

Preparation steps

Peel the onion and stud with the cloves. Put into a pan with the milk and bay leaf and bring to the boil. Cover and simmer very gently for about 20 minutes, then remove the onion and bay leaf and crumble the bread into the pan. Remove from the heat and leave to stand for about 15 minutes. Then stir in the butter, creme fraiche, horseradish, salt, pepper and nutmeg and puree. Check the seasoning, transfer to a warmed sauce-boat and sprinkle with a little nutmeg.
