For the chicken
4 Chicken breasts (skinned)
1 tsp Garam Masala
2 tsps paprika
1 tsp ground Cumin
2 red chili peppers (deseeded and finely chopped)
4 garlic cloves (finely chopped)
1 tsp Turmeric
1 Tbsp Tomato paste
fresh ginger (peeled and finely chopped)
4 Tbsps Yogurt
1 tsp salt
lemon juice (from 1 lemon)
For the raita
1 cup Yogurt
½ Cucumber (seeds removed and finely sliced)
2 mint (leaves finely chopped)
1 tsp salt
½ green chili pepper (deseeded and finely chopped)
To serve
4 Tomatoes (chopped)
Flatbread

Preparation steps

1.
Cut the chicken breasts into wide strips and set aside.
2.
Mix the remaining ingredients together to make a paste and rub into the chicken slices. Cover and refrigerate for 8 hours.
3.
For the raita, mix together all the ingredients and set aside.
4.
Heat the broiler or barbecue to a medium setting. Thread the chicken slices onto wooden skewers and broil for about 3 minutes on each side or until the chicken is cooked through.
5.
Serve with the raita, chopped tomatoes and flat breads alongside.
