- ¼ cup butter (melted)
- 2 eggs (beaten)
- ¾ cup milk
- 1 ½ cups all-purpose flour
- 4 tsps Baking powder
- 1 tsp ground cinnamon
- ⅔ cup light brown sugar
- salt
- ¾ cup coarsely chopped, toasted Macadamia Nuts
- For the topping
- 6 Tbsps coarse Sugar crystal (or sugar)
- ¾ cup coarsely chopped, toasted Macadamia Nuts
Preparation steps
1.
Heat the oven to 400ºF/200ºC/Gas 6. Grease a 12 hole muffin tin.
2.
Mix together the butter, eggs and milk.
3.
Sift the flour, baking powder and cinnamon into a mixing bowl. Stir in the sugar and the macadamia nuts
4.
Pour the egg mixture into the dry ingredients and stir until only just combined and the mixture is still slightly lumpy.
5.
Spoon the mixture into the muffin tins. Sprinkle with sugar and macadamia nuts
6.
Bake for about 15-18 minutes until risen and golden.
7.
Leave in the tins for 5 minutes then place on a wire rack to cool.
