- breadcrumbs (for dusting)
- 200 grams Leeks
- 150 grams Gorgonzola
- 250 grams Pastry flour
- 1 tsp salt
- ½ freshly ground pepper
- 1 pinch Nutmeg
- 2 tsps Baking powder
- 1 tsp baking soda
- 1 egg
- 50 milliliters Peanut oil
- 300 milliliters Buttermilk
- 80 grams grated Emmentaler cheese
Preparation steps

Preheat the oven to 180°C (approximately 350°F). Grease a muffin tin with butter and dust with breadcrumbs.

Rinse, trim and finely chop the leeks. Cut the Gorgonzola into small cubes. Mix the flour salt, pepper, nutmeg, baking powder and baking soda in a bowl. Whisk together the egg, oil and buttermilk. Add the flour mixture, leeks and gorgonzola to the egg mixture and mix just until all ingredients are moist. Distribut the batter into the prepared muffin tin and sprinkle the tops with Emmentaler cheese. Place in the preheated oven and bake for about 25 minutes.

Remove from the oven and cool in the tin for about 5 minutes. Remove from the tin and serve warm or cooled, as desired.
