- 1 small onion
- 1 garlic clove
- 5 grams ginger
- 2 Tbsps olive oil
- 2 Tbsps Tomato paste
- 3 Tbsps balsamic vinegar
- 400 grams crushed Tomatoes (canned)
- 3 Tbsps soy sauce
- 2 Tbsps Apple syrup
- 1 pinch Curry powder
- Tabasco sauce
- salt
- freshly ground peppers
- 8 Chicken thigh (Drumsticks)
Preparation steps
Peel onion, garlic and ginger and chop finely. Heat oil in a saucepan and saute everything until translucent. Add tomato paste and saute for 1-2 minutes. Add vinegar and simmer for about 1 minute. Add tomatoes, soy sauce, apple juice, cumin powder and a little Tabasco, simmer for about 10 minutes, stirring often. Reduce temperature and simmer, covered, for about 10 minutes more. Season with salt, pepper and Tabasco to taste and cool.
Line baking sheet with parchment paper. Rinse and par dry chicken legs. Loosen skin and spread sauce directly on meat, pull skin back as well as possible. Arrange chicken on baking sheet and bake in preheated oven at 200°C (approximately 400°F) for abour 25 minutes. Baste with the sauce often. Arrange chicken on plates and serve accompanied by remaining sauce.
