For the chicken
4 Chicken breasts
For the marinade
1 tsp ginger (freshly grated)
1 Tbsp honey
2 garlic cloves (finely chopped)
2 Tbsps light sesame oil
½ lemon (juice)
1 Tbsp Curry powder
½ tsp ground Cumin
½ tsp cayenne pepper
3 Tbsps soy sauce
salt
For the cucumber salad
2 Cucumber
2 chili peppers
30 grams Peanuts (unsalted, unroasted)
1 tsp sesame oil
Lime juice
Light soy sauce

Preparation steps

For the chicken: Rinse the chicken breasts, pat dry and cut into long strips.

For the marinade: Mix the marinade ingredients together and coat the chicken strips well. Cover and refrigerate overnight. Place chicken on wooden skewers and fry in a pan over medium-high heat or on the grill until golden brown, 2-3 minutes on each side.

For the cucumber salad: Peel the cucumbers, cut in half, remove seeds and finely chop.

Rinse chile peppers, cut in half, remove seeds and finely chop.

Toast peanuts until golden brown in a dry pan, allow to cool and chop coarsely. Mix all prepared cucumber salad ingredients with sesame oil and season with lime juice and soy sauce. Serve salad with the chicken skewers.
