This delicious spread is full of a variety of vitamins and minerals including magnesium, potassium, and vitamins B6 and E! This spread works well with a piece of whole-wheat bread, which is a great source of fiber that is important for digestion and keeps you full for longer.

If you want more spice, try adding jalapeños or some bell peppers!

1 handful fresh Cress
1 handful baby Spinach
1 Tbsp cilantro
1 Tbsp Chervil
2 Anchovy fillet
1 Pickle
1 Tbsp Caper
1 garlic clove
4 ozs unsalted butter (room temperature)
2 Tbsps olive oil
1 tsp Japanese Mustard (or other hot mustard)
½ lemon (juiced)
Sea salt
white, freshly ground peppers

Preparation steps

For the herb butter, rinse the herbs and remove the leaves from the stems. Bring approximately 7 ounces of water to a boil. Add the herbs and blanch for 6 seconds. Remove from the water and drain on paper towels.

Rinse the anchovies under running water. Puree the anchovies in a blender with the pickles, capers, and peeled garlic. Add the butter and process until combined. 

3.

Add the herbs and the oil, and mix until combined thoroughly. Lastly, add the mustard and the spices, and mix until combined. Transfer to a small bowl, and chill in the refrigerator. Serve with grilled meat or fish.
