Ingredients

For the dough
3.333 cups white Bread flour
¼ oz Dried yeast
1 tsp salt
2 Tbsps olive oil
flour (for the work surface)
For the topping
4 Tbsps olive oil
3 ¼ cups Artichoke (from a jar, drained and sliced)
cup green, pitted Olives (drained)
12 caperberry (from a jar, drained)
1 ¼ cups Chorizo (skinned and sliced)
1 Tbsp thyme
8 Tbsps Parmesan (shaved)

Preparation steps

1.
To make the dough, mix the flour, yeast and salt in a bowl. Add 200 ml lukewarm water and the oil and knead into a smooth dough using your hands. If necessary add more flour or water to achieve the right consistency. Knead well on a floured work surface for around 10 minutes, then cover and leave to rise in a warm place for around 1 hour.

Heat the oven to 220°C (200°C in a fan oven), 425°F, gas 7.

Knead the dough and split into four equal portions. Roll out into circles, place on sheets of baking paper and spread with olive oil.

Place the artichokes, olives, capers and chorizo on top, season with ground black pepper and sprinkle with thyme. Bake in the preheated oven for around 20 minutes.
5.
Remove from the oven and serve topped with parmesan shavings.
