Sweet potatoes are an incredibely nutritious root vegetable, packed with vitamin A and other powerful minerals such as fiber and manganese.
A dash of fresh parsley on top of this dish adds color and freshness, as well as vitamin K.

- 6 ½ cups Yam (cut into rough pieces)
- 2 medium Sweet potato (diced)
- 4 tsps Ghee (i.e. clarified butter)
- 1 medium onion (finely sliced)
- 2 garlic cloves (halved)
- 1 walnut-sized ginger (grated)
- 2 Cardamom
- 2 tsps sugar
- 1 Tbsp Coriander
- 1 Tbsp Vindaloo paste
- 1 tsp Turmeric
- ½ Cinnamon stick
- ⅞ cup Yogurt
- salt
- freshly ground peppers

1 Skillet, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Wooden spoon, 1 Peeler
Preparation steps

Cook the yams in boiling, salted water for 15 minutes until almost tender. Add the sweet potatoes and simmer for a further 10 minutes. Drain and set aside.

Heat the ghee in a casserole dish over a medium heat and fry the onion, garlic and ginger until golden brown. Stir in the seeds from the cardamom pod, the sugar, ground coriander, vindaloo paste, turmeric and cinnamon.
3.
Add the yam and sweet potatoes and cover with 5 ounces water.
4.
Simmer for 10 minutes, stir in the yogurt, and season to taste.
