2 organic Limes
2 Star anise
1 pc Cinnamon stick
1 Tbsp Chili thread
18 ozs jam sugar (2: 1)

Preparation steps

1.

Rinse and dry tomatoes, remove stems and cut into small pieces. 

2.

Rinse limes in hot water and grate zest. Squeeze juice from both limes. 

3.

Combine tomatoes with lime zest and juice and bring to a boil. Simmer for about 5 minutes on low heat. 

4.

Strain mixture through a sieve. Mix with sugar and spices and bring to a boil again. Add chile threads.

5.

Simmer for about 4 minutes and pour while hot into preserving jars. Seal well. Goes very well with whole wheat bread and cottage cheese.
