4 garlic cloves
1 onion
1 ½ ozs ginger
3 sticks Lemongrass
3 dried Kaffir lime leaves
2 tsps ground cumin
1 Tbsp ground coriander
2 tsps ground Turmeric
2 Tbsps vegetable oil

Preparation steps

1.

Cut the chile peppers into large pieces.

2.

Peel and press the garlic. Peel and chop the onion and ginger.

3.

Remove the outer leaves from the lemon grass and finely chop the lower soft part.

4.

Crumble lime leaves.

5.

Mix everything with cumin, coriander, turmeric, oil, salt, and pepper in a mortar to a fine paste. Alternatively, mix finely with a hand blender or mini chopper.

6.

Pour curry paste into a glass jar and store in the refrigerator or freeze in portions.
