Preparation steps

Grease the refractory molds with butter and sprinkle with breadcrumbs.

Rinse, trim and blanch the spinach in salted water. Drain, squeeze well, and chop the spinach finely.

Separate the eggs. Beat the butter with the egg yolks and a pinch of nutmeg until fluffy. Stir in the chopped spinach alternately with the grated cheese, the cream and the crème fraîche. Beat the egg whites until stiff. Fold the egg whites into the spinach mixture along with the flour. Season with a pinch of salt and nutmeg.

Place the mixture into the greased molds and bake in a preheated oven at 200°C (fan: 180°C, gas mark 3) (approximately 400°F) until golden brown, about 15-20 minutes. Serve immediately. Serve to taste with a spicy cherry sauce.
