12 ozs fresh, young Spinach
16 ozs dried Pasta shell
8 ozs Feta (cubed)
1 red chili pepper
salt (to taste)
3 Tbsps good-quality olive oil
freshly ground Black pepper

Preparation steps

1.
Rinse spinach and drain. In a pot of salted boiling water, blanch the spinach for 1 minute. Drain well and keep warm.

Rinse the chili, using a sharp knife, slice lengthwise, remove the seeds and white inner ribs and discard. Finely dice the pepper.
3.
Cook the pasta in a large pot of boiling, salted water according to package directions until al dente. Drain, retaining 1 cup of the cooking water. Mix the pasta with 3 to 4 tablespoons olive oil, add the spinach, chili pepper and season well with salt and pepper. Add the cubed feta cheese and toss gently. Add a small amount of the pasta cooking water if desired. Divide among plates and serve.
