60 grams Spinach
1 kilogram turkey breasts
freshly ground peppers
3 slices Bacon
75 grams Feta
2 Tbsps vegetable oil
300 milliliters Vegetable broth (or chicken stock)
1 Tbsp Crème fraiche
salt

Preparation steps

1.

Rinse and spin dry spinach. Rinse turkey breast and pat dry. Butterly turkey. 

2.

Preheat the oven to 140°C (approximately 275°F).

3.

Season turkey with pepper and cover with bacon. Top with spinach leaves.

4.

Dice feta cheese and sprinkle onto spinach. Roll up turkey and secure with kitchen twine.

5.

Heat oil in a roasting pan heat and sear turkey on all sides. Pour in broth and roast in oven for about 1.5 hours. Rotate and baste with pan juices throughout. 

6.

Remove turkey from oven and cover with foil. Pour pan juices into a saucepan. Stir in crème fraîche and simmer until slightly creamy. Plate turkey and serve drizzled with pan sauce.
