1 Red chili pepper
1 onion
1 pc fresh ginger (about 2 cm)
1 garlic clove
200 grams Udon Noodle
400 grams Chicken breasts
2 Tbsps soybean oil
1 handful fresh cilantro
40 grams roasted Peanuts
3 Tbsps soy sauce

Preparation steps

Trim the spinach, rinse and shake dry. Trim the chile, rinse and chop finely. Peel the onion, ginger and garlic and finely chop. Cook the udon noodles according to package instructions.

Rinse the chicken, pat dry and cut into strips or pieces. Cook in a skillet in hot oil while turning until golden brown, 2-3 minutes. Season lightly with salt, add onion, ginger, garlic and chile and cook for 1-2 minutes. Stir in the spinach and cook. Rinse the cilantro, shake dry and pluck off the leaves. Coarsely chop the nuts. Drain pasta well, mix with the spinach chicken and season everything with soy sauce. Serve garnished with nuts and cilantro.
