50 milliliters Whipped cream
2 Tbsps Crème fraiche
400 grams Spinach
1 garlic clove (finely chopped)
salt
freshly ground peppers
Nutmeg (ground)
50 grams black Olives (pitted and coarsely chopped)
1 Tbsp olive oil
100 grams Feta

Preparation steps

1.

Rinse spinach and blanch in boiling salted water for a few minutes. Drain and rinse in cold water, drain again and squeeze well, then chop coarsely.

Whisk eggs with cream and creme fraiche, season with salt, pepper and nutmeg.

3.

Heat oil in a pan and saute spinach and garlic briefly. Add egg mixture and sprinkle with crumbled feta and olives. Cover and cook for about 5-6 minutes on low heat. Invert onto a plate and serve.
