Preparation steps

1.

Peel the shallot, garlic and potatoes, cut into small pieces and boil with the rinse and chopped leaks in the vegetable stock for 20 minutes, covered. Add the spinach and simmer another 5 minutes. Remove from heat, puree everything and season with lemon juice, salt and pepper.

Serve the soup on plates, garnished with almonds.
