- 4 Tbsps Oil
- 1 onion (finely chopped)
- 1 clove garlic cloves (chopped)
- 21 ozs Butternut squash (peeled, deseeded and roughly chopped)
- 1 ½ cups Quinoa (washed)
- 3 cups vegetable stock
- 2 Tbsps chopped parsley
- 4 Tbsps Pomegranate seed
- parsley (to garnish)

1 Cutting board, 1 Small knife, 1 Tablespoon, 1 Measuring cups, 1 Teaspoon, 1 deep bowl, 1 Immersion blender
Preparation steps
1.
Heat the oil in a large pan. Gently cook the onion and garlic until soft but not brown.
2.
Add the squash, fry briefly over a high heat then add the quinoa and the stock.
3.
Bring to a boil then reduce the heat and simmer for 15-20 minutes or until the quinoa is cooked and the squash is tender. Add a little more stock or water during cooking if needed.
4.
Season with salt and pepper and stir in the parsley.
5.
Serve in bowls with the pomegranate seeds with the parsley leaves scattered over.
