Ingredients
- For the fries
- 1 kilogram waxy potatoes
- 2 sprigs rosemary
- 4 sprigs thyme
- 1 tsp ground paprika
- Sea salt
- vegetable oil (for frying)
- For the steaks
- 4 Ribeye Steaks (each 200 grams)
- 2 Tbsps Canola oil
- salt
- freshly ground peppers
Preparation steps
For the fries, peel the potatoes and rinse thoroughly. Cut into sticks about 1 cm (approximately 1/2-inch) in diameter and rinse with cold water. Pat dry on a paper towel. Pluck rosemary and thyme leaves and finely chop. Mix chopped herbs with paprika and 1 teaspoon salt.
Heat the vegetable oil in a saucepan (about 165°C/approximately 330°F). The oil is hot enough when bubbles form on a wooden cooking spoon dipped in the oil. Fry the potatoes in batches in the oil for about 5 minutes until they are soft but not browned. Remove from oil and drain on a paper towel. Increase the temperature to about 190°C (approximately 375°F) and fry potatoes again in batches until crisp and golden brown, about 2 minutes. Remove, drain well and sprinkle with the seasoned salt.
Preheat the oven to 100°C (approximately 210°F) convection.
For the steaks, heat canola oil in a skillet over medium heat, add steaks and cook on each side for 3-5 minutes. Season with salt and pepper. Wrap in foil and transfer to oven to cook for 5-8 minutes. Then take steaks out of the oven, unwrap and serve with the fries.
