150 grams Beef (Fresh and tender)
50 grams green paprika
30 grams Leeks
30 grams ginger
2 tsps Rice wine
1 tsp soy sauce
1 Tbsp Oyster sauce (or Fish sauce)
1 Tbsp cornstarch (dissolved in water)
1 tsp sugar
1 pinch salt
150 grams vegetable oil (Of which 40 grams consumed)

Preparation steps

1.

Cut beef into 2x3 cm (approximately 1x1 inch) wide slices. 

2.

Mix 1/2 teaspoon rice wine in a large bowl with salt and 1/3 of prepared cornstarch mixture. Add beef to the bowl, mix and let rest.

Rinse bell pepper, remove seeds and ribs and cut into slices smaller than 3 cm (approximately 1 inch) Cut leeks and ginger in similar sized slices. Mix soy sauce in a bowl with oyster sauce, rice wine, sugar, salt and remaining cornstarch solution.

4.

Heat the wok, add oil, fry beef and bell peppers together while stirring. Add remaining oil if needed, add leek and ginger to the wok, fry briefly while stirring and then add soy sauce mixture. Mix well and fry while stirring for 2-3 minutes. Serve immediately.
