5 lg slices Pineapple (fresh or canned)
700 grams Beef (from the hip)
1 tsp salt
½ tsp black peppers
1 Tbsp Pastry flour
2 Tbsps sweet soy sauce
2 tsps brown sugar
2 Tbsps mild Wine vinegar
10 Tbsps Pineapple juice
2 Tbsps vegetable oil
2 stalks Leeks
1 Red chili pepper

Preparation steps

1.

Peel pineapple and cut 5 large slices. Cut the core out from the center and cut slices into smaller pieces.

Rinse meat, pat dry and cut into thin strips.

Whisk together salt, flour, pepper, vinegar, soy sauce and pineapple juice. Add meat, cover and marinate in the refrigerator one hour.

Cut chile and leek into thin slices. Heat oil in skillet or wok. Pour in meat with marinade. Add chile and leek rings. Simmer over medium heat with the lid closed. Stir well and add pineapple chunks. Simmer over medium heat for another 5 minutes with the lid open with occasional stirring.

5.

Serve with white rice.
