1 Tbsp Oyster sauce

Preparation steps

Cook egg noodles in a pot of boiling water for 4 minutes, drain, rinse with cold water, drain again. Rinse pork, pat dry and cut into fine strips. Peel garlic and chop finely. Rinse chile pepper, trim and cut into small cubes. Mix pork in a bowl with ginger, chile pepper and garlic. Heat 1 tablespoon oil in a large pan or wok, fry pork on all sides for 3 minutes. Rinse beans, trim and cut into small pieces. Rinse bell pepper, cut in half, remove seeds and ribs and cut into small pieces. Rinse scallions, trim and cut white and light green portions into small pieces.

Peel orange with a sharp knife, remove white skin and remove orange fillets, taking care to collect juice.

Heat remaining oil in the pan, add vegetables, fry for 3 minutes while stirring. Add noodles and pork, mix well and season with soy sauce, oyster sauce, orange juice, salt and sugar. Mix in orange segments and serve immediately.
