Preparation steps

1.

Rinse the rice in a sieve, transfer to a saucepan with double the amount of water, season with salt and simmer until tender, about 25 minutes.

2.

Peel the onion and cut into thin wedges. Rinse the peppers, halve lengthwise, remove the seeds and white ribs and cut into diamond shapes. Rinse, remove the strings and halve the snow peas diagonally. Wipe the mushrooms with a damp cloth,  and cut into strips. Rinse the sprouts and drain well. Rinse the turkey, pat dry and cut into strips. Peel the ginger and garlic and finely chop. Heat the oil in a wok (or skillet) and sauté the ginger and garlic briefly. Add the turkey and cook stirring. Push the meat, ginger and garlic to the sides of the pan, add the onions and saute about 1 minute, then the peppers, mushrooms and snow peas. Finally, the sprouts and cook until done.

3.

Stir in the soy sauce, season with chile and serve with the rice.
