Ingredients
- for the dough
- 100 grams finely ground Spelt
- 40 grams grated almonds
- 3 egg yolks
- 3 Tbsps warm water
- 70 grams honey
- 3 egg whites
- for covering
- 600 grams Strawberries
- 2 Tbsps honey
- ¼ l Whipped cream
- 1 Banana
- 1 tsp lemon juice
- Lemon balm (for garnish)
Preparation steps
Preheat the oven to 180°C (approximately 350°F). Line the springform pan with parchment paper. Mix the flour and almonds. Mix the egg yolk and water in a bowl. Stirring constantly, add the honey. Beat until the mixture is creamy. Beat the egg yolks until very stiff and carefully fold into the mixture. Spread onto the bottom of the springform pan and bake for 30 minutes. Let cool, moisten the paper with water and remove the paper.
Rinse and mash 150 grams (approximately 0.5 cup) of the strawberries. Sweeten with the honey. Puree the mixture and spread on the cake. Let sit for 30 minutes. Rinse and pat the strawberries dry. Whip the cream. Mash the banana and lemon juice. Stir into the cream. Spread the cream on the cake. Halve the strawberries and cover the cake with it. Sprinkle with the lemon balm leaves. Cut into pieces and serve.
