Strawberry Frozen Yogurt Popsicles

Yogurt adds plenty of lean protein to these popsicles while strawberries are rich in minerals such as iron and vitamin C.
You can easily substitute other berries in these popsicles, such as blackberries or blueberries.

- 7 ozs Strawberries
- ½ lemon (juiced)
- 2 Tbsps honey
- 14 ozs Yogurt
- 2 ozs powdered sugar
- 6 ½ ozs Whipped cream
Preparation steps
Rinse strawberries, trim and puree in a blender. Add 1 tablespoon lemon juice and honey to strawberry puree and stir.
In a bowl, mix yogurt with powdered sugar and remaining lemon juice.
Whip cream in a bowl until stiff and fold into yogurt mixture. Pour strawberry puree on top of yogurt mixture and stir briefly, do not completely mix.
Spread the strawberry yogurt mixture to 8 ramekins or popsicle tray and let freeze for about 1 hour. Insert popsicle sticks into each individual popsicle and let rest in the freezer for at least 4 hours until completely frozen.
