Preparation steps

1.

Blanch the tomatoes. Peel, remove the seeds and cut into cubes.

2.

Peel and finely chop the onion and garlic cloves. Rinse the papayas, cut in half lengthwise and remove the seeds. Scoop out the papaya with a sharp-edged spoon, leave a 1 cm (approximately 1/3 inch) wide edge. Dice the papaya.

3.

In 4 tablespoons of oil, sauté the garlic until transparent. Stir in the tomato and papaya. Cook for a few minutes while stirring. Season to taste with salt, pepper and nutmeg. Mix in the grated cheese, breadcrumbs, butter, the chopped coriander and the remaining olive oil.

4.

Place the mixture in the papaya halves. Put the papayas into a greased baking dish and bake about 20 minutes in a preheated oven (220°C (approximately 425°F)). Garnish with coriander leaves and serve with tortilla chips.
