12 Prince mushrooms (or other wild mushrooms)
150 grams Ground beef
1 Tbsp olive oil
2 scallions
1 garlic clove
2 Tbsps parsley (finely chopped)
2 slices Bacon
½ tsp ground ginger
1 Tbsp soy sauce
3 Tbsps red Bell pepper
chopped parsley (to sprinkle)

Preparation steps

Gently remove the stems from the mushrooms. Lightly season the inside of the caps with salt. Finely chop 4 tablespoons of the stems. Rinse, trim, and chop the scallions. Cut the bacon into thin strips.

Heat the oil in a pan. Cook the ground beef until browned all over and cooked through. Mix in the chopped mushroom stems, scallions, and bacon. Peel the garlic, and pass through a press into the pan. Cook the mixture for an additional 3-4 minutes. Mix in the soy sauce, parsley, ginger, and the diced red peppers. Season to taste with salt and mix thoroughly.

Fill the mushroom caps with the ground beef mixture. Place the stuffed mushrooms into a greased baking dish. Bake for 15 minutes in a 180°C (approximately 350°F) oven. Remove from the oven and serve.
