- 4 small Watermelon
- 2 Cucumber
- 1 handful mint
- 1 tsp Coriander
- 1 Colorful pepper
- 1 lemon (juice)
- 1 tsp brown sugar
- salt
- 4 Tbsps Canola oil
Preparation steps

Cut the top off the melons and spoon out the flesh. Remove seeds from the watermelon and cut into bite size pieces. Rinse the cucumber, cut off ends, quarter lengthwise and cut into 1 cm (approximately 1/2 inch) thick pieces. Mix the cucumber and melon in a bowl. Rinse the mint, shake dry, pluck off leaves and cut into strips. Toast the coriander and the pepper in a pan. Cool, and roughly grind. Whisk together the lemon juice, sugar, salt and oil. Add the coriander, pepper and mint, stir and mix the dressing with the salad. Season to taste and spoon into the melons.
