150 grams ground almonds
150 grams chopped almonds
4 eggs
350 grams cream cheese
80 grams sugar
2 organic lemons (zested and juiced)
150 milliliters Whipped cream
For garnish
250 grams Currants
2 Tbsps sugar

Preparation steps

Preheat oven to 175°C (approximately 350°F).

For the cheesecake, grease a baking dish 20-24 cm diameter (approximately 8-9 inches diameter). Thinly spread 2 tablespoons ground almonds into baking dish. In a bowl, mix remaining ground almonds, chopped almonds, eggs, cream cheese, sugar, lemon zest, lemon peel and whipping cream with an electric mixer until smooth and pour into baking dish. Bake cheesecake until golden brown, 35-40 minutes.

For garnish, rinse currants, place in a saucepan with sugar and 2-3 tablespoons water, bring to a boil and remove from heat.

Remove cake from oven, garnish with currants and serve immediately.
