500 grams Pastry flour
1 tsp salt
1 tsp ground Fennel
½ cube fresh Yeast (approximately 42 grams)
200 milliliters lukewarm milk
130 grams Quark
1 egg
3 Tbsps milk (for brushing)

Preparation steps

1.

Mix flour with salt and fennel in a bowl and make a well in the center. Crumble the yeast and stir with 4 tablespoons lukewarm milk until smooth. Sprinkle with flour from the edge, cover and let rest for about 15 minutes.

Add remaining milk with quark and knead to a smooth dough. If necessary add milk or flour. Cover dough and let rest for another 60 minutes.

Preheat oven to 200°C (approximately 400°F).

Shape dough into small balls and place them closely together in a buttered springform pan. Let rise another 15 minutes.

5.

Mix egg with milk together and brush over dough. Bake in preheated oven for about 40 minutes. Remove, cool, separate from the mold, break into pieces and serve.
