Preparation steps

1.

For the chicken, rinse the meat, pat dry and chop. Peel the pineapple, cut out the stalk and dice the fruit into cubes. Peel the onion and cut into wedges. Rinse the bell peppers, cut in half, trim and cut into pieces. Peel garlic and finely chop.

2.

Brown chicken in hot oil. Add garlic, onion, bell peppers, pineapple and ginger and cook for 2-3 minutes, then deglaze with a little broth. Add the vinegar, sugar and a little soy sauce and oyster sauce and simmer 4-5 minutes. Add broth as needed and cook vegetables until tender but still somewhat al dente. Mix cornstarch with 1-2 tablespoons of water and stir into the sauce. Cook until slightly thickened.

3.

Season chicken to taste with chili sauce, oyster sauce and soy sauce. To garnish, sprinkle the chicken with scallions, sprouts and peanuts. Serve with rice, if desired.
