½ Pineapple
1 red Bell pepper
1 onion
2 carrots
200 grams Baby corn cob
1 garlic clove
350 grams Wide rice noodle
2 Tbsps Peanut oil
1 tsp ginger (freshly grated)
100 milliliters Chicken broth
2 Tbsps Rice vinegar
1 tsp brown sugar
2 Tbsps light soy sauce
5 Tbsps Chili sauce (sweet and sour)
1 tsp cornstarch

Preparation steps

Rinse meat, pat dry and cut into bite-sized pieces. Peel pineapple, core and cut into cubes. Rinse pepper, halve and remove seeds and ribs, cut into small pieces. Peel onion and cut into strips. Peel carrot and dice. Rinse baby corn and cut into pieces. Peel garlic and chop finely.

Cook pasta according to package instructions.

Heat oil in a wok or a pan and saute chicken for a few minutes. Add garlic, onion, corn, peppers, carrots, pineapple and ginger and sau together for 2-3 minutes. Deglaze pan with a little broth. Add vinegar, sugar, a little soy and chilli sauce and simmer for 4-5 minutes. Add broth as needed. Vegetables should still be al dente. Add 1-2 tablespoons of water, finish cooking.

Drain pasta and place into bowls. Top with chicken and serve.
