Preparation steps

Rinse and trim the zucchini. Quarter lengthwise and cut into 3 cm (approximately 1 1/4 inch) long pieces. Peel and slice the garlic. Bring the vinegar, 300 ml (approximately 10 ounces) of water, the salt, and sugar to a boil. Add the zucchini, and cook for 1 minute.

Remove the zucchini from the cooking liquid. Add the zucchini, peppercorns, garlic, and mint to prepared, sterilized jars. Bring the cooking liquid to a boil, and pour into the jars. Ensure that everything is covered. Seal the jars tightly, cool completely, and store in a dark, cool place.
