500 milliliters milk
250 grams Couscous
60 grams sugar
4 eggs
ground saffron
1 Cinnamon stick
For the fruit
2 Kiwi
100 grams green Grape
50 grams almonds
150 grams Yogurt (0.1% fat)

Preparation steps

1.

Boil the milk with sugar, saffron, and cinnamon stick and add the couscous. Simmer, stirring occasionally for about 25 minutes. Remove from heat and remove the cinnamon stick. Allow to cool slightly.

Separate the eggs and mix the yolks into the rice. Beat the egg whites until stiff and fold into the mixture. Pour the couscous into ramekins and bake in a preheated convection oven at 180°C for about 15-20 minutes. Remove and let cool.

Peel the kiwis and cut into quarters lengthwise and then into slices. Peel the grapes, cut in half and remove the seeds.

4.

Slice the almonds finely. To serve, sprinkle the couscous pudding with the almonds and garnish with a dollop of yogurt.
