850 grams starchy potatoes
150 grams Pastry flour
1 egg
1 egg yolk

Preparation steps

Rinse the potatoes and cook until soft in boiling water, about 25-30 minutes. Drain, peel and press through a ricer while still hot. Knead together with the flour, egg, and yolk and let the dough rest briefly. If needed, add some more flour, depending on the water content of the potato variety.

Shape the dough into finger-like noodles using wet hands. They should be about 8 cm (approximately 3 inches) long. Cook the noodles in boiling salted water for 4-5 minutes. Remove with a slotted spoon and drain.

Melt the butter in a frying pan, pour in the noodles and stir-fry. Sprinkle with the poppy seeds and serve on plates, dusted with powdered sugar.
