Nutritional values

Chickpeas are rich in protein as well as the mineral magnesium, which plays an important role in the function of nerves and muscles.

Easily turn this into a vegan dish by replacing the minced meat with the same amount of mushrooms and plant-based alternatives for the cream cheese and cheddar.

Ingredients

Ingredients
2 Sweet potato
1 Red onion
1 garlic clove
8 ozs chickpeas (glass; drained weight)
3 Tbsps olive oil
10 ozs Ground beef
1 tsp ground paprika
1 tsp ground cumin
9 ozs strained tomato
½ bunch parsley
4 Tbsps cream cheese
salt
peppers
2 Tbsps Lime juice
3 ozs grated Cheddar cheese

Preparation steps

1.

Wash the sweet potatoes thoroughly and slice them lengthwise into fine slices. Blanch sweet potatoes in boiling salted water for 2-3 minutes. Remove and let cool a little.

2.

Peel and chop the onion and garlic. Drain the chickpeas and let them drain. Heat 2 tablespoons of oil in a frying pan and fry the minced meat over a high heat. Add onions, garlic, spices, chickpeas and tomatoes and simmer for 5 minutes.

3.

Meanwhile, wash parsley, shake dry and chop. Add half of the parsley with cream cheese to the sauce and stir in. Season with salt, pepper and lime juice.

4.

Brush a casserole dish with the remaining oil and alternate layers of sweet potato slices and minced meat-chickpea sauce. Finish with sauce and sprinkle with cheddar. Gratinate under the preheated oven grill for about 5 minutes and sprinkle with remaining parsley.
