Preparation steps

1.

Peel sweet potatoes, cut each into 6 thin slices and toast in a toaster for about 10 minutes or bake in a preheated oven at 400 F for 10 minutes.

In the meantime clean, wash and roughly grate the carrot. Wash basil, shake dry, pluck off some leaves and put aside, chop the rest. Mix cottage cheese with carrot and chopped basil and season with salt, pepper and paprika.

3.

Wash the red cabbage leaves and cut into fine strips. Spread sweet potato slices with cottage cheese and cover with red cabbage strips and basil leaves.
