22 ozs Sweet potato (2 sweet potatoes)
1 tsp olive oil
8 ozs Cherry tomatoes
1 scallion
1 Avocado
10 ozs Alfalfa sprouts
salt
peppers
7 ozs cream cheese
cayenne pepper
2 tsps flaxseed
2 tsps Pumpkin seed
2 Tbsps Lime juice
1 Tbsp Pumpkin seed oil

Preparation steps

Peel sweet potatoes, cut lengthwise into slices approx. 1/3" thick, place on a baking tray lined with foil or baking paper, and brush with oil. Bake sweet potato slices in preheated oven at 200 °C / 400 ˚F for about 15-20 minutes.

In the meantime, wash and halve the tomatoes. Clean the scallion, wash, and cut into thin rings. Halve the avocado, remove the pit, lift the flesh out of the shells with a spoon and cut into slices. Wash the sprouts and drain.

Remove sweet potato slices from oven and season with salt and pepper. Spread cream cheese on slices, top with avocado slices and cherry tomatoes and season with salt, pepper and cayenne pepper. Top with sprouts, flax seeds, pumpkin seeds, and scallion rings. Drizzle sweet potato toasts with lime juice and pumpkin seed oil.
