- For the batter
- ⅜ cup cold water
- ⅜ cup Coconut milk
- ⅔ cup plain flour
- 1 egg (beaten)
- 2 Tbsps brown sugar
- 1 pinch cinnamon
Preparation steps

To make the batter, pour the water and the coconut milk into a bowl and slowly add the flour, a little at a time. Beat with a whisk. Now add the egg, sugar and cinnamon and mix

until smooth. Leave the batter to rest for 15 minutes.

Heat the oil in a deep fat fryer to 170°C. Cut the pumpkin in half, remove the seeds, peel, and cut into slices. Dip the pumpkin slices in the batter and fry in the hot fat until golden brown. Drain on a kitchen paper towel and place in the oven at 80°C to keep warm.

Mix the cinnamon and sugar together, sprinkle over the warm pumpkin fritters and serve.
